Main Courses & Lunches
This is a gratifying alternative to traditional chicken, shrimp or steak caesar salad. Avocado, tomato and hard-boiled eggs make it a hearty lunch or light dinner. A real crowd pleaser with my Caesar Salad Dressing recipe (on my recipe page)!
This tasty salad with Japanese buckwheat noodles is both quick and healthy. Great for lunch or a light dinner!
A non-fishy meal that everyone will love! I use tilapia, but any white fish is perfect.
Juicy grilled pineapple, tangy red onion, tender mushroom, along with sweet and salty honey-soy chicken are a winning combination!
Very tasty – even the meat lovers will enjoy this!
You’ll love this French-style pizza packed with brie, caramelized onions, and apple slices.
The perfect combination of salty prosciutto, sweet caramelized onion and melty brie.
An easy lunch that satisfies any crowd. I usually serve as wraps. Also great on French bread or over lettuce leaves or tomato slices, with fresh bread on the side.
These amazing sweet and spicy veggie burgers are both vegan and gluten free. Can be served as traditional burgers, or on their own with toppings like guacamole, salsa etc.
This is a refreshing lunch idea, served on crusty bread along side a leafy, green salad. I prefer using pears, but nectarines can be tasty if ripe enough.
This is always a hit, whether served as a side or as a lunch main. I eliminate the chicken if using as a side dish.
A decadent and delicious seafood dish. Very easy to prepare!
This is an Asian-inspired marinade that compliments the mild flavour of Mahi Mahi. Great summer dish, and would be good on any white fish.
Super easy and salsa may be made a day ahead. Strawberries can be substituted for mango if preferred – both are excellent!
Appetizers & Snacks
These delectable Thai-style chicken satay are marinated in a peanuty sauce, and then grilled. Rich and delicious!
These skewers combine the flavours of caprese salad for a delightful snack. Fresh basil at it’s best!
Fail safe bruschetta as an appetizer, or served with Italian mains. They never stay on the plate long!
Fresh ginger, citrus and sesame are a lovely marinade for this tuna tartare, served as an appetizer or main.
Elegant and simple appetizer or snack.
Spicy, cheesy, creamy, the ultimate appetizer. These antojitos are loaded with cream cheese and peppers and are baked to perfection.
Great served heated or cold, with pita, crackers or veggies. Always a crowd favourite!
A quick and colourful appetizer for happy hour. Serve with fresh salsa, guacamole or sour cream as dipping sauces-or by itself. I often double the recipe as they go fast!
Cindy’s favourite breakfast – delicious and healthy to get your day started properly!
Healthy, easy, and tasty for breakfast or lunch.
The ultimate French toast breakfast indulgence!
Salads & Soups
This flavourful salad is healthy, colourful and delicious. The avocado, tomato and red onion, along with zesty lime dressing are a match made in heaven!
A fresh, flavourful salad that is quite filling as is, but add chicken if you’d really like to make a meal of it. Parts of this salad can be made ahead of time, but it is best enjoyed shortly after being dressed and assembled. You can prep all the veggies (minus the avocado), quinoa, and […]
This salad can be made with spinach or mixed greens. The candied pecans make it awesome!
A seriously delicious Thai treat! Serve with rice or rice noodles if desired. One of my favourite soups!
Countless Saturday nights at my family cottage included steak and caesar salad while watching our beautiful sunsets over Lake Huron. My Mom, sister and I fine-tuned this recipe over the years, and while I’ll do my best to convey the amounts, it’s mostly a lot of tasting and adjusting until you get it just right!
The secret to this is the dill pickles. Adds that little something extra!
The summery flavours in this soup are lovely. Adjust tabasco, chili and paprika according to taste.
This refreshing salad is mojito-inspired, but there’s no rum. That being said, adding a splash or two would be a fun way to jazz up the recipe for an adults-only gathering. Leftovers are fabulous when added to sparkling wine!
A classic salad with poppy seed dressing, which has a tangy-sweet flavour that brings everything together so nicely. Making the dressing yourself is surprisingly easy – recipe included, or feel free to substitute a favourite store bought brand.
Melt-in-your mouth chocolate goodness! For extra decadence, spoon Rene’s Sinful Toblerone Chocolate Fondue Sauce (on our recipe page) over these with a dollop of whipped cream on top.
Courtesy of our good Canadian boating friend and guru of many things here on the island (especially chocolate fondue) – thanks Rene!
This decadence can be served over ginger cake or any type of cake, ice cream etc.
This will tantalize your tastebuds while baking in the oven! Compliments of my fellow charter chef, Karen. Best served with my Rum Caramel Sauce (on our recipe page).
Affectionately named as such by one of our early charter groups, this is a thirst-quenching cocktail made with a Jamaican grapefruit sparkling beverage, commonly found in the Caribbean. Jam-packed with the refreshing taste of paradise! Also great with vodka instead of rum.
Thanks for this creation, straight from the Soggy Dollar in the British Virgin Islands. Now a favourite throughout the Caribbean and especially on ARAVILLA!
A decadent mix of Vodka, Kahlua and Bailey’s Irish Cream
Credit for this treat goes to one of our favourite Yacht Club bartenders, Keith. A tall, cool, delectable drink (Keith and the beverage that is!)
Signature island beverage to welcome guests aboard ARAVILLA! A new twist to this Caribbean favourite was introduced to us by Elvis, at Elvis’s Beach Bar in Road Bay, Anguilla – add a splash of amaretto in place of grenadine. Adds extra punch to the punch!
Refreshing on a hot day!
