This is always a hit, whether served as a side or as a lunch main. I eliminate the chicken if using as a side dish.

Ingredients
3cupsslaw (red and green cabbage, carrots)
1/2red pepper
1cooked chicken breast
2green onions
3tbspchopped peanuts
3 tbspfresh cilantro
DRESSING:
4 tbsppeanut butter
2tbsphoney
2tbspwarm water
1 1/2 tbspsoy sauce
1tbsprice vinegar
1/2juiced lime
1tsptoasted sesame seeds
1 tsptoasted sesame oil
1/4 tspground ginger
1small clovesgarlic
salt and pepper
Instructions
Add ingredients for Thai Peanut Dressing into a mason jar or bowl then shake or whisk to combine. Taste then adjust lime juice and/or add water to thin if necessary.
Add remaining ingredients into a large bowl. Drizzle desired amount of dressing on top then toss well to combine. Scoop into bowls then serve with lime wedges.
