Thai Crunch Salad with Chicken

This is always a hit, whether served as a side or as a lunch main. I eliminate the chicken if using as a side dish.

Ingredients

  • 3 cups slaw (red and green cabbage, carrots)
  • 1/2 red pepper
  • 1 cooked chicken breast
  • 2 green onions
  • 3 tbsp chopped peanuts
  • 3 tbsp fresh cilantro
  • DRESSING:
  • 4 tbsp peanut butter
  • 2 tbsp honey
  • 2 tbsp warm water
  • 1 1/2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 juiced lime
  • 1 tsp toasted sesame seeds
  • 1 tsp toasted sesame oil
  • 1/4 tsp ground ginger
  • 1 small cloves garlic
  • salt and pepper

Instructions

  • Add ingredients for Thai Peanut Dressing into a mason jar or bowl then shake or whisk to combine. Taste then adjust lime juice and/or add water to thin if necessary.
  • Add remaining ingredients into a large bowl. Drizzle desired amount of dressing on top then toss well to combine. Scoop into bowls then serve with lime wedges.
